Marshall isn’t really a “seasonal” brewer – a crisp pale lager in the cold of winter or a rich Imperial Stout in the summer sun, it doesn’t matter, as long as it’s good. That said, he does love himself a solid Red IPA, and for whatever reason, he seems to brew most of his to crush during the Autumn months. That’s certainly the case for his Sunsetter Red IPA, the name of which pays homage to the transition between seasons, not to mention the beautiful sunsets where he lives. This recipe was unapologetically inspired by Marshall’s favorite commercial Red IPA, Sierra Nevada Brewing’s Celebration Ale, though with personal touches that make it something completely different. And it is delicious! The high CoH bitterness from the Chinook balances the malty sweetness from the Maris Otters, Honey Malt, and C60, while the Amarillo contributes a beautiful orange blossom note. If you’re afraid the Fuller’s yeast might not attenuate enough (this has never been an issue for Marshall), you can either swap it for something else (Whitbread Dry and Chico would be good) or reduce your mash temperature to 145˚F/63˚C.
