Very much appreciated this episode. I use a campden tablet, ascorbic acid (add that to the list!), and Brewtan B in the mash. My thought is that these will carry through to the beer in the end. I avoid cold side aeration as much as possible and my beers never seem to oxidize. I also add phosphoric acid to bring down the pH pre-fermentation. Does seem to give the beer a bit more snap.
