Jordan Folks is lovingly referred to as Brülosophy’s traditionalist, as he not only tends to see the value in engaging in some processes viewed by others as laborious, but he actually enjoys doing it. As those familiar with Jordan are well aware, he has a passion for lagers, particularly those of the paler sort like Czech Pale Lager, German Pils, and Munich Helles. However, he also loves dark lagers, and after obsessing over Baltic Porter a few years ago, he brewed up a recipe based on information he gleaned from professional brewers he looks up to, ultimately landing on what he calls Looking Glass Ties Baltic Porter. Unlike many of the recipes we share, this one leans much more into more traditional processes with its extended mash and boil lengths, as well as cool fermentation and lagering time. While you’re free to adapt this however you see fit, we’re confident you’ll love the outcome if brewed the way Jordan designed it, but either way, let us know what you think!
